Cambrico
Cambrico has a strong commitment to the recovery of the cultural heritage that they preserve through the organic cultivation of the autochthonous old Rufete grape vineyards, promoting biodiversity and respect for nature.
In 1999, in the midst of the decline of the vineyards due to the abandonment of the village elders and depopulation, Fernando Maillo, a native of the area, takes an interest in the centuries-old vineyards of the Rufete grape in El Pocito. In collaboration with the Agricultural Technological Institute of Castilla y León (Itacyl), Cámbrico initiated a project for the scientific reseach of the Rufete grape.
The construction of the winery, perfectly integrated into the landscape, began in 2006. The winemaking and ageing cellars are half-buried in the mountain to facilitate gravity vinification and natural thermal insulation.
Thanks to Cambrico's efforts, 130 tiny parcels totaling 11 hectares have been maintained or recovered. The need to make low production wines and the mission to protect the exceptional ecosystem is imposed, so that each bottle shows only identity, sincerity and the terroir of each vineyard.
The wines are the natural reflection of each plot. In order to maintain the best expression of the grape and its terroir, they do not filter, clarify or stabilize the wines. Sulphites are minimal.
The estate is certified organic.
