Cambrico Rufete Blanco Granito

This wine highlights the qualities of Rufete Blanca, a native variety from Salamanca. Aromas of chamomile, citrus, apple and dry leaves. Great liveliness on the palate with a hint of tannin that the thick skins bring to this wine.

Grapes come from the vineyard “La Mata de Francia” sitting at 700m altitude. A rare Spanish white with incredible focus, texture and minerality.

Vinification
Hand harvest in boxes of 16 kg with selection of bunches in the vineyard. Spontaneous fermentation starts in used French oak barrel with native yeasts. Then fermentation ends in a combination of stainless steel vats and used French oak barrels. Movements of the must and wine always by gravity. Unfined, unfiltered.
