Manual harvest, 100% destemmed. Spontaneous alcoholic fermentation with indigenous yeasts in thermoregulated stainless steel tanks. 2 days cold maceration prior to fermentation.
10 months ageing, 50% in thermoregulated stainless steel vats and 50% in French oak barrels Demi-Muids of 600L.
