Vallisto Viejas Blancas

Viejas Blancas stands for “Old whites” recalling the old white grape parcels where this wine comes from. The wine is produced from equal proportions of Riesling and Pinot Blanc, harvested from vineyards planted more than 70 years ago in Salta. It is fermented in large barrels. Off-white color, slightly cloudy as this wine is not filtered.

Vinification
Direct pressing into 500L barrels protecting the juice at all times from oxidation with dry-ice (carbonic). Fermented with native yeasts. No acid correction, no nutrients added. The wine is not filtered. Due to low pH this wine did not do malolactic fermentation.
