Vinification
Both varieties were fully destemmed and fermented separately. Both lots were left on the skins for 10 days, and pumped over for the duration of fermentation. After fermentation it was pressed to tank and then, after a few days of settling, racked to neutral french oak and aged for 11 months. The wine went through full malolactic and was bottled unfined and unfiltered.
