Vinification
The wine fermented spontaneously with 100% "foot-trodden" whole clusters. The vinification is very smooth in concrete vats, practically an infusion. No sulfite used during winemaking or during subsequent aging. Unclarified and unfiltered. Small addition of sulfites prior to bottling.
