Cuvée Les Haut de Perry comes from a super fractured Jurassic limestone plot at an altitude of 270m, where the limestone rock is very exposed.

Vinification
Harvesting is done by hand followed by destemming and berries are placed into stainless steel vats. Spontaneous fermentation, with native yeast, lasts for about 30 to 35 days with gentle pumping over for the smoothest extraction possible. Hauts de Perry matures in terra cotta pots and Flextank vats for about 2 years.
The wine is unfined and unfiltered. Bottling day is always set on a fruit day with a waning moon. At this stage, low levels of SO2 is added at levels of max. 2 grams per hectolitre.
