Vinification
After fermentation in stainless steel tanks the wine is aged for 6 months in oak barrels on lees with a weekly "Battonage" to provide more body and creaminess on the palate.
The wine is then aged for 4 months in concrete tank for refining and natural settlement (Porosity provides an interesting evolution to the wine like oxygenation in barrel, but without any added flavor.) No filtration.
