VInification
After hand harvesting, the wine was 100% destemmed to a stainless steel open top tank. Ambient yeast began to ferment the wine and it was punched down twice daily. Pressed 2/3 of the way through fermentation, it was finished in a stainless tank then barrelled down to neutral French barrels and puncheons for aging. It aged for 8 months prior to bottling, where 30 ppm SO2 was the only additive.
