Vinification
Amontillado from the fermentation of the first bud of the Palomino Fino grape from the Matalian estate, controlled spontaneous fermentation between 22-24º. It is fortified with the addition of vinous alcohol up to 15º and raised under a flor veil for a period of five years according to the system of criaderas and soleras. When it ends, a second addition of vinous alcohol up to 17.5º thus ending the biological aging and beginning the oxidative aging for 8 more years, totaling an ageing of 13 years.
