Vinification
Fermentation is carried out in 1,000 liters open container with 25% whole cluster. The grapes are gently stepped on so that a part of the skins remain whole in the fermentation, which is carried out spontaneously with wild yeast. The maceration was carried out for 60 days, in which the work consisted of sinking daily the cap manually, without breaking it. After the bleeding and pressing is done, we let it settle for 7 days. After this, it is put into two 600-liter barrels and left to stand for 1 year.
