This Moscatel from a vineyard planted in 1867 is a diamond in the rough; expressing the "clay skin" it was made in.

Vinification
Grapes go with their skins into the Tinajas, (clay amphoras). A spontaneous fermentation occurs with wild yeasts. The grapes are left in contact with their skins for 6-8 weeks with manual punch downs. Manual basket press and aged on their less for 1 year. Bottled by gravity without any clarification or filtration.
